Pondicherry’s Sri Aurobindo Ashram

Ingredients
- 500 Gms Basmati Rice
- 150 Gms Onions
- 5 Gms Cinnamon
- 5 Gms Cloves
- A Pinch Of Turmeric Powder
- 1gm Saffron
- 10 Ml Milk
- 20 Gms Walnut
- 20 Gms Cashew Nut
- 1litre Water
- 50 Gms Oil
- Salt to Taste
Method

Wash and soak rice for 30 mins.

Slice onions vertically.

Fry whole spices, turmeric powder, add rice and mix well.

Add saffron dissolved in little warm milk.

Add hot water and salt and cook well.

Heat oil and fry onions till golden brown and remove.

Fry cashew nuts and walnuts in little oil.

Garnish kashmiri pulao with fried onions, walnuts and cashew nuts.
